Bún dọc mùng là một món ăn đơn giản nhưng lại rất ngon miệng. Ngoài bún, món này có mọc, giò hoặc sườn heo cùng với vị của nước lèo chua thanh nhẹ rất dễ chịu.
Cho giò heo và xương heo vào nồi cùng với nước lạnh nấu sôi cho ra hết bọt bẩn, đổ bỏ nước đầu, rửa thật sạch lại giò heo và xương heo. Cho trở lại vào nồi, nấu chín cùng với hành tây và tiêu hạt. Nấu đến khi giò heo mềm thì vớt giò heo cho vào thau nước lạnh để thật nguội thì cho ra rổ để ráo. Phần xương heo còn lại trong nồi nước vẫn tiếp tục hầm cho ra hết chất ngọt, thời gian hầm từ 3-4 tiếng tuỳ thích.
Bạc hà (dọc mùng) lột sạch vỏ, cắt vừa ăn ngâm trong nước muối 10 phút, xả thật sạch. 1 trái táo xanh rửa sạch bổ làm bốn phần, trái còn lại thì mang đi ép lấy nước táo nguyên chất. Cà chua bổ làm 8 bỏ hết hạt.
Nêm gia vị vào nồi nước lèo gồm muối, đường, hạt nêm cho vừa ăn. Thêm 1 muỗng canh giấm, 1 muỗng canh rượu trắng, và 3 muỗng canh nước cốt táo. và phần táo chẻ tư vào nồi. Cho cà chua vào nồi. Đợi sôi lại thì nêm nếm gia vị.
Nấm mèo ngâm nở bằm nhỏ. Trộn nấm mèo vào giò sống, thêm gia vị vào nếu cần (giò sống và nấm mèo dùng làm mọc). Khi nồi nước lèo đã nêm vừa ăn, bạn cho từng muỗng giò sống vào nồi cho đến hết giò sống. Sau khi giò sống đã chín thì vớt ra để riêng.
Cho dọc mùng vào nồi nấu cho chín vừa tới, vớt ra rổ cho ráo đợi nguội, dùng tay vắt cho ra bớt nước. Không cần vắt khô quá. Khi ăn cho bún vào tô, cho giò heo, mọc vào tô cùng với dọc mùng. Chan nước lèo vào rồi cho thêm rau thơm lên trên. Bạn đã có một tô bún dọc mùng hấp dẫn thơm ngon.
