Kem đậu đen trong trí nhớ của mình là chè đậu đen được đựng trong túi nhựa nhỏ. Để cho đông đá lại là thành kem. Hôm nay bỗng dưng nhớ cái món tuổi thơ nên mình vào bếp làm thử luôn. Món này thì cực đơn giản dễ làm luôn nha.
Đậu đen rửa sạch ngâm qua đêm hoặc ngâm 4-6 tiếng cho nở. Sau đó cho đậu vào nồi nấu cùng 2 lít nước. Nấu đền khi đậu sôi thì hớt bọt (nếu có) rồi đun trên lửa liu riu đến khi đậu mềm.
Tùy theo đậu mới hay cũ mà thời gian nấu sẽ dài ngắn khác nhau nữa nhé. Nếu thấy nước cạn quá thì châm thêm nước. Nấu đến khi đậu mềm và hơi cạn nước thì cho đường vào. Đảo đầu cho đường tan và đậu thấm đường. Bước này giống như sên đậu vậy.
Để cho đậu nguội bớt thì múc đậu và một ít nước đậu đen vào khuôn làm kem. Sau đó rót sữa tươi vào rồi cho vào ngăn đá tủ lạnh khoảng 6 tiếng cho kem đông.
Kem đậu đen không dẻo mịn như kem có whipping cream mà cứng, thơm nức mùi đậu và sữa. Ăn cây kem vừa làm vừa nhớ về hương vị những cây kem trong kí ức tuổi thơ năm nào.
