Mực làm sạch, phần râu và thân để riêng, cắt phần thân mực thành các đoạn dài khoảng 2cm, để ráo nước. Muối rang khô, cho vào cối giã cùng hạt tiêu. Ớt và hành lá cắt khúc, để riêng.
Trong một tô lớn, cho 2/3 muối tiêu vừa giã vào trộn đều cùng 50g bột mì và 80g bột bắp. Thêm mực vào, trộn đều cho mực phủ đều hỗn hợp.
Cho dầu vào chảo sâu lòng, làm nóng với lửa vừa và cho mực vào chiên khoảng 1-1.5 phút cho tới khi mực có màu vàng nhẹ thì vớt mực ra, để lên giá cho ráo dầu. Không nên chiên lâu vì mực sẽ bị teo lại và dai. Cuối cùng cho mực đã chiên vào một tô trộn lớn, rắc hành, ớt và chỗ muối tiêu còn lại lên trên, xóc hoặc trộn đều rồi bày lên đĩa ăn ngay nhé!
