Mứt Cam Dẻo kết hợp cùng những lát bánh mì sandwich là món ăn quen thuộc của người phương Tây. Cách sơ chế cam làm mứt cam: Cam bổ làm đôi hoặc làm tư theo chiều dọc, thái mỏng, càng mỏng càng tốt. Trong khi thái cam, lưu ý nhặt hạt ra để riêng. Hạt ngâm vào 1 chiếc chén nhỏ, đổ đầy nước để hạt tiết ra pectin.
Sau khi thái mỏng cam, cho vào nồi và đổ nước hoặc nước cam và nước cốt chanh (nếu dùng) ngập mặt. Ngâm qua đêm (tốt nhất 24h).
Ngày hôm sau, cho nước ngâm hạt cam vào nồi, cho hạt vào 1 chiếc túi vải, cũng thả vào nồi. Đặt lên bếp đun sôi, hạ lửa vừa nấu đến khi vỏ cam mềm (khoảng 30 phút nếu ngâm đủ giờ, 1 tiếng nếu làm ngay sau khi thái lát cam).
Cách làm mứt cam: Sau khi cam mềm, có thể vớt một phần cam lên, vắt kiệt nước trở lại nồi, bỏ bã. Vớt túi hạt cam ra, bỏ đi. Cho đường vào nồi, khuấy đều cho tan đường, vặn bếp đun sôi trở lại.
